Vinification
The Langhe Nebbiolo 1661 is born from a selection of Nebbiolo grapes that grow with a north-facing exposure.
This is complemented by a selection of grapes from the younger rows. The harvest is done manually, and the selection of the clusters takes place on a sorting table. Cryomaceration is carried out for 24/48 hours. Subsequently, fermentation and maceration occur in steel, followed by a few months of aging in oak barrels.
